- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp dried Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
For the Pasta:
- 12 oz 340g pasta — fettuccine or pappardelle for creamy, penne or rigatoni for tomato
- Kosher salt for boiling water
For the Creamy Version:
- 2 tbsp unsalted butter
- 4 cloves garlic minced
- 1 cup heavy whipping cream
- ¾ cup Parmesan freshly grated
- ½ cup reserved pasta water
- Salt white pepper, and a pinch of nutmeg
- Fresh parsley to finish
For the Tomato Version:
- 2 tbsp olive oil
- 1 medium onion finely diced
- 4 cloves garlic minced
- ½ cup dry white wine or chicken broth
- 1 can 400g crushed tomatoes
- 1 tsp dried oregano
- 1 tsp sugar
- Fresh basil to finish
- Parmesan for the table
Pat drumsticks completely dry with paper towels. Rub all spices generously over every surface including under the skin where possible.
Heat a wide deep pan or Dutch oven over medium-high heat with no oil. Place drumsticks skin-side down and sear for 4–5 minutes without moving until skin is deeply golden and releases cleanly from the pan. Flip and sear the other side for 3 minutes. Remove and set aside they will not be fully cooked yet. Do not drain the rendered fat from the pan.
Tomato version: Reduce heat to medium. Add diced onion to the rendered fat and cook for 5–6 minutes until softened and golden. Add garlic and cook 60 seconds. Pour in white wine and scrape up browned bits. Reduce 2 minutes. Add crushed tomatoes, oregano, sugar, salt, and pepper. Return drumsticks to the pan, nestling into the sauce. Cover and simmer for 30–35 minutes until fall-off-the-bone tender. Creamy version: Add butter to the rendered fat and melt together. Add garlic and cook 60 seconds. Pour in heavy cream and bring to a gentle simmer. Return drumsticks to the pan. Cover and simmer on medium-low for 25–30 minutes until cooked through. Remove drumsticks, pull meat off the bone, and shred back into the sauce. Stir in Parmesan off direct heat.
While drumsticks braise, cook pasta in heavily salted boiling water until just al dente 1–2 minutes under package directions. Reserve ¾ cup pasta water before draining.
Tomato version: Add drained pasta directly to the pan and toss gently, adding a splash of pasta water if needed. Serve drumsticks whole on top or shred meat off the bone and stir back in. Garnish with fresh basil and Parmesan. Creamy version: Toss pasta in the cream sauce with shredded chicken, adding pasta water a splash at a time until sauce coats every strand without being gluey. Garnish with fresh parsley and extra Parmesan.
Serve immediately.
- Never skip the sear it renders the fat that becomes your cooking medium and develops the entire flavor base of the dish through the Maillard reaction. A properly seared drumstick produces a sauce that tastes restaurant-quality. The difference is just 8 minutes.
- Do not drain the rendered drumstick fat from the pan after searing this is your flavor-packed cooking medium for everything that follows.
- Always reserve pasta water before draining the starch helps loosen and silkily bind the sauce to every strand of pasta.
- Cook pasta 1–2 minutes under package directions it finishes cooking in the hot sauce and absorbs flavor as it does.
- If tomato sauce tastes too acidic, add a pinch more sugar, a small knob of butter stirred in at the end, or a splash of heavy cream to balance.
- Fridge storage: Airtight container up to 2 days. Add a splash of broth or water when reheating to loosen the sauce. Reheat low and slow on the stovetop aggressive heat dries out the chicken and breaks the cream sauce.
- Freezing: Freeze the drumstick sauce without pasta for up to 3 months. Cook fresh pasta when reheating the texture is dramatically better than frozen pasta.
- Variations: Use Cajun spice blend instead of Italian seasoning for a smoky spicy version. Add sun-dried tomatoes and Kalamata olives to the tomato version for a Mediterranean twist. For a crowd, toss pasta and sauce in an oven-safe dish, top with mozzarella and Parmesan, and bake at 400°F for 15 minutes until golden and bubbling.
